Christmas Camp Cocktails (12 days of Christmas blog collaboration)

Enter Julia with day 8 – Camp Christmas Cocktails.

Now it’s no secret that I love a good cup of festive cheer.
After spending months preparing, decorating, cooking and planning; I do love to treat myself to a little something special on the day that I dont have to share with the kids.
They have enough guys so this one’s for us.

This year I really wanted to give eggnog a whirl. It’s not much of a done thing in these parts but in a wave of seasonal nostalgia, I wanted to be taken back to my childhood. I’ve never actually had eggnog but all the Christmas movies from my childhood feature it so I thought maybe we were missing out….
turns out we’re not.
In a Christmas gift to you, I have tried eggnog so you wouldn’t have to.

So, moving on from the disaster that is eggnog in summer… I found a recipe for a perfect cup of Christmas spirit for you to sip on while you cook a 5 course festive feast and your kids fill up on bread rolls.

One of my big motivations in the perfect Christmas cocktail is keeping it simple. I’m currently in a campsite so I didn’t really have a choice but even at home, I just don’t have 1 Tablsepoon of vanilla vodka and a 1/2 cup of blue Curacao laying around the house to finish off a recipe. Some of them are very complicated. Where does one even buy whole fresh cranberries?

I also don’t have alot of spare cash at this time of year to go all out on obscure cocktail ingredients that I can’t use in anything else –

enter Limoncello. It is like the superglue of the liquer world. A jack of all trades if you will.

Hailing from southern Italy; limoncello is traditionally served as an after dinner digestivo but as this kiwi girl has come to find, it can also be used in a multitude of cocktails and Christmas baking. To make it even better, if you have a lemon tree out the back, you can have a go at making your own (which makes an amazing gift!)

When we were in Sicily I bought a bottle of authentic Limoncello which survived our 723 hour trip home through 400 airports only to be knocked off the shelf by my husband.


Therefore, in the hope “Santa” might leave a bottle of this in my Christmas stocking this year – I dedicate this recipe to him.

3 cups of sparkling wine
(I use brown brothers prosecco but for extra sweetness you could use something like riccadonna)

250ml Limoncello

1 cup frozen raspberries (I used mixed berries because I’m in regional western Australia and that’s all I could get without selling my soul)

Mix together in a pitcher and garnish with fresh mint.

It is so simple yet such a party!
